Choc Berry Crunch (Vegan Friendly)

Recipe thanks to our Programme Manager, Jess Anderson from Taste Success with Jess.

This delicious slice came about after a failed bliss ball attempt, which turned into the base of this slice. Add a chocolate topping and voila - you have a deliciously simply dessert or snack.

Base Ingredients:

  • 2 tbsp peanut butter

  • 2 tbsp coconut oil

  • 1/4 cup cacao or cocoa powder

  • 1/2 cup almonds

  • 1/4 cup pumpkin seeds

  • 1/4 cup sunflower seeds

  • 1/4 cup desiccated coconut

  • Pinch of sea salt and cinnamon

Chocolate Topping Ingredients:

  • 1/3 cup coconut oil

  • 2 tbsp cocoa

  • Sprinkle of cinnamon and vanilla

  • 1 tbsp coconut butter (if you have it)

Method:

1. For the base, whizz together the ingredients in a food processor until you have a sticky mixture that holds together when pressed into a dish.
2. Pop into the fridge to set and then prepare your chocolate topping.
3. Over some heat, whisk together the coconut oil, cocoa, cinnamon, vanilla and coconut butter if you have some (cacao butter would also work here) until combined.
4. Pour the chocolate topping mixture on top of the base and sprinkle some berries on top (Jess likes using blueberries), then pop in the freezer. Once it’s set, chop into pieces and enjoy!
