Ambrosia Salad
Recipe thanks to Abigail Watson, one of our Wellington facilitators
Ingredients:
1 can of Coconut cream, chilled overnight
½ cup of natural yoghurt
2 tbsp of honey
1-2 cups diced fruit of choice
Method:
1. Mix chilled coconut cream and natural yoghurt together using a hand mixer
2. Add honey and fold in diced fruit, can add some chocolate chips for the kids
