Courgette Spaghetti Noodles (Vegan Friendly)

Ingredients:

  • 4 large courgettes, ends trimmed

  • 1 clove garlic, chopped

  • 2 tbsp olive oil, ghee, or coconut oil

  • 2 tbsp fresh chopped basil

  • Sea salt and pepper to season

Method:

1. Use a box grater to create noodles. Take each courgette and slide lengthways along the largest holes.
2. As the courgette gets to the end, rotate it and slide it along again. Repeat until whole courgette is shredded.
3. Warm the oil in a large frying pan on medium heat. Add the garlic and courgette noodles, gently cook for 3 minutes, stirring occasionally until slightly soft.
4. Add the basil, salt and pepper. Stir the mixture for 1 minute, on medium heat, until the noodles are coated with warm seasoning then serve.
